    A half double crochet I think would produce a nice dense weave for felting. Good lord, that is a lot of work. That'd take me a coupla days of non stop knotting to make something only to have it shrink.

    Kilmarnock bonnet...

    That is referred to as a Hummel or Kilmarnock bonnet, and the Scottish Tartans Museum offers a nice reproduction already:
