Well, it's been a while since I updated the master list in the first post, but you'll find a thread here on celtic music. It's not all Celtic rock, but it has some stuff worth investigating. I'll try to get it up to date tomorrow - check back later.
Just off the top of my head... check out Seven Nations, The Pogues, The Prodigals, Bad Haggis, The Young Dubliners, The American Wake, and The Saw Doctors.

Flogging Molly, Enter the Haggis, and The Tim Malloys.

For more traditional stuff, I've been enjoying Andy Stewart's Robert Burns album.

Iolaus, here are three that aren't on your list. First and foremost, Searson. They are a fantastic group. (just ask Jimmy). Next I'd put Tinkers Dam and Uisce Beatha. Both of these are local groups in the richmond area, but both have a great energetic sound. I think either could make it big in Celtic music if they get a chance.

I went to their site and listened to some clips... pretty good. Something about Searson reminds me of Lucinda Williams (whom I like a lot).

I keep hearing about the Saw Doctors, I got to check them out.
Seven Nations an ETH are the standards with Rathkiltair, Great big Sea and the Glengarry Bhoys, always a must see. Dropkicks and Flogging Molly are a few peoples faves here. The Pogues well what can I say.
There have been some decent lists made of a lot of good bands.
    It's all about individual taste.
