It is a universal North American term, though it's a bit outdated by now. For example, Paul Bunyan is a mythical lumberjack of American tall tales. While some of tall tales featuring Bunyan may be set in Canada, the bulk of them were definitely set in the U.S.
The origin of Buffalo:
(1) The pattern is called buffalo check, because the owner of one of the first wool mills in the U.S. owned a herd of buffalo. He made woolen outerwear, including in the distinctive red & black pattern. Or (2) it was traded by a Scotsman to Native Americans for Buffalo Pelts. Or (3) it originated in Buffalo, New York.
When Paul Bunyan's stories were later popularized, the writer described him wearing a buffalo check flannel shirt.
