Mole (moe-leh) is a wonderfully complex sauce that originated in the Mexican state of Puebla & it contains both chile peppers & Mexican chocolate, plus quite a number of other ingredients. When properly made it is a FABULOUS sauce that can easily rival the most complex French sauce. HIGHLY recommended!!!

Good mole is really good. Even bad mole is pretty good. It is a bit like, well, kissing a cute girl. Even if it aint the best kiss in the world, it is better than no kiss at all.

And I personally like good Latin sauces better than French ones. Earthy vs rich, no contest. Most French food leaves me feeling like Mr Creosote and his wafer thin mint.
