If you're gonna make a haggis without meat, I say make a dessert haggis.
Pie crust or fillo dough or something like that, stuffed with brownie batter, cookie dough, peanut butter, fudge, and crunchy candy bits of some kind and bake it. Some sort of ubersweet monstrosity like that ought to do the trick.
