Ceilidh type dancing is very forgiving... Just look at some of the youtube videos... at the end of the day though pretty much everyone has a good time...

If you go to the website of the Country Dance and Song Society, cdss.org, and click on "Events and Groups", you can search for a traditional dance group near you. I don't know where in Arizona you are, but I found the Arizona list, which is here:

Every local group has a contact person listed- just contact them and see if they can hook you up with a caller, who will be able (for a modest fee, I'm sure) to get your whole group doing easy, fun, dances of exactly the sort you describe. You won't regret it. It is THE best way to get a whole bunch of people, even if they're not regular dancers, to coalesce into a temporary community of joy. You may also want to arrange for a live musician (fiddle, button-box, or whatever your contact can suggest) to really get things going.
