It wouldn't be hard to do.
Simply attach your pocket configuration (made of soft kidskin, elk, or thin cowhide) to a stiff piece of veg-tan instead of sewing it into the body of the sporran.
If the leather you select is thin enough you could sew the pocket section with a home machine. You would have to sew it to the veg-tan by hand.
Here is the interior of Mael Coluim's day sporran that I made.

Depending on the type/types of sporran you plan on using your stowage piece in, you might consider shaping the bottom of your stiff panel to more securely rest (and stay) where you place it.
