The "HMY Britannia" is a must see, if you are into ships and all. I was just there in November and I was very, very pleased that I took the time to go for the tour on the Britannia.
As for Edinburgh, a very fine time of year to be sight seeing there, long days and lots of beautiful ale's to drink! A pub on every corner almost, so you won't have to go far to quench your thirst.

Oh ya, do take the time to hike up Arthur's seat, the view is very nice and it is a good way to sweat some of the booze out from the night before. It take about a half hour to hike up,(even when hung-over). So enjoy!
