While we don't MAKE them ourselves, we have had about a dozen pair made in Scotland for various local customers. The pattern has always been square, not on the bias (though I will admit I've never asked for them to be on the bias). We can get standard Trousers, Argyll Trews, Fishtail Trews and Military Trews (either Fishtail cut or a straight waistband).
Measuring is a little tricky and I agree with those that have said they only look good on "certain body shapes" (unlike the kilt which will make virtually any man look good, trews are best reserved for the "less substantial" among us IMHO). Wil, at 6' and 165#, you should be a fine candidate.
