Date Night
When you wear a kilt on a date with your wife, what does she choose wear? Skirts/ dresses? Pants?

That depends more on what is worn with the kilt - a jumper, a jacket, a formal jacket... each is a different order of dress and a fashion-aware lady will clothe herself in a similar way.
Note of course that there are different levels of formality with both dresses/skirts and with slacks/pant suits for ladies.
Afraid you'd have to be much more specific about what you're wearing and the venue you're attending for us to respond or for any of the ladies to make their determinations. At extremes: a kilt in a pub vs. a kilt at a royal wedding. My sense is that the ladies would dress appropriately, and more for the event and the venue than for the kilt.

If we go out to dinner I usually am casually kilted, mostly with a USA Kilts casual number. She is as casual as I am - and that usually means leggings with a long top or shorts or (maybe) a skirt. I may also opt for leggings in place of kilt hose - depending on weather. My wife buys leggings for me so I know she likes them. She also bought my last four kilts - so who am I to argue, right?

Well, yes, but all the questions and parameters I mentioned still apply with my wife. Venue, level of formality there, her mood... and there are still some pantsuits that are just as formal as any skirt, so it depends on all and any of those far more than whether I am wearing trousers or a kilt, which is in fact unimportant to the decision.

Thank you for the input. I appreciate it. Does she wear skirts as well?
I don't tell my wife what to wear either. I do have an amusing thought when we go out, "My wife wears the pants." Not that it bothers me in the least. I am simply curious what other women do.
