Traditional Highland Pipes, I would say Highland Cathedral, closely followed by Dark Island. "itchy fingers" is a challenge to play (so our pipe major tells me).
Irish Pipes: Brian Boru's March by Paddy Moloney of the Chieftains, anything by Liam O'flynn, Colin Melville (Tannahill weavers).....
beyond that, I love all pipe music, Highland, lowland, uilleanne, even the water pipes in our bathroom excite me!!

I don't have any real favorites,although I do listen to mostly traditional.

My list would be so long, it would get annoying, even to me! ;-) I agree with Graham on this one...If it has drones, it's worth listening to!

Any bagpipe music is fine with me although I do tend to nod off a little when "Amazing Grace" is played. Just heard it too, too, often.

Marines Hymn and Taps always make my soul stir when I hear them on the pipes.
For fun I really like this bit of filk called "March of the Cambreadth" by Heather Alexander. Its featured in several books I like, and the theme is awesome.

Really though anything on the pipes is worth listening to.

I'm with Graham, Sav, and Switchblade - if it has a bag and drones, I'm there. I include the spanish pipes, the gaita galaga, in there too.
