    Haggis

    Hi
Ehm nearly sixty and hae never eaten HAGGIS. All my kith and kin are Scots. I hae never heard or seen any o' them eat Haggis. In Dundee Scotland most people think it is just for the tourist.

I watched my clan chief eating haggis at a games last year, but he was using a bit of single-malt for sauce! Guess I'm just chicken; I stuck to the BBQ.

    Pour1Malt,

You got a recipe for that you're willing to share? I think that sauce would go good with many things.

weel... ai very the sauce dependin oan the meat an the kind o dish it is...

but here is ma basic recipe....

    Whisky Cream Sauce

    1 beef stock cube
1/2 cup peated malt whisky (Laphroaig, Lagavulin, Ardbeg, Caol Ila)
    2 oz butter
    4 tablespoons double cream
    ground pepper

boil whisky over low heat for a couple minutes (you do not want the alcohol- use high heat and boil it off)

at the same time melt the butter in a hot skillet (the skillet, you just browned the meat in, works best)

add whisky and 1 beef cube to butter, stir well and scrape meat juices from skillet, then add cream, stir and scrape more, give a good few grinds of pepper, heat until sauce just starts to boil- then remove from heat and serve...

Todays breakfast, definately not something I have very often, maybe once a month

Dublin corned beef hash with a fried egg on top, spicy sausage, bacon, fried tomato slices, sourdough toast, orange juice and a nice pot of Irish breakfast tea with some Irish Creme in it
