As far as tartan goes wear what you want, myself I love the Gunn Modern, I find that I can wear it in a casual,

or formal style

and it always looks great.
I personally have no experience with any kiltmakers in Edinburgh, my kilt is from A&J Scott in Aberdeen, and it has lasted for close to 60 years, you might want to go visit Alex Scott up in Aberdeen, however I have only heard good things about Geoffrey Tailors in Edinburgh, the website is below:

As far as a Sgian Dubh, there are dummy ones, that are all one piece no blade and there are others that have bottle openers and the like Rab Gordon who is a member makes the latter here is his website:

For boots I just love my Caterpillars I have owned them for years and use them on my motorcycle, or out in the snow they have worn very well.
