Actually, if you order a cheese-enchilada with mole poblano sauce at one of our local Mexican food emporiums, you could eat cheese, chiles & chocolate all at the same time... & enjoy it!

Mole (moe-leh) is a wonderfully complex sauce that originated in the Mexican state of Puebla & it contains both chile peppers & Mexican chocolate, plus quite a number of other ingredients. When properly made it is a FABULOUS sauce that can easily rival the most complex French sauce. HIGHLY recommended!!!

Happiness? I'd settle for being less annoyed!!!

Good mole is really good. Even bad mole is pretty good. It is a bit like, well, kissing a cute girl. Even if it aint the best kiss in the world, it is better than no kiss at all.

And I personally like good Latin sauces better than French ones. Earthy vs rich, no contest. Most French food leaves me feeling like Mr Creosote and his wafer thin mint.

Alas, I shall never know, as cinnamon is a major ingredient in mole- and I don't like turning red, itchy, and bumpy.
