Okay folks here a a couple of mine,
Irish Whiskey Cake
1 box yellow cake mix (without pudding)
1 box instant vanilla pudding
4 eggs
1/2 c. oil
1 c. milk
1 shot Irish whiskey (1 1/2 oz.)
1 c. walnuts, chopped
TOPPING:
1 stick butter
1 c. sugar
1/2 c. Irish whiskey
Combine all cake ingredients. Mix three minutes with mixer and pour into a well greased tube or bundt pan. Bake at 325 degrees for 40 to 50 minutes.
Melt butter. Add sugar and whiskey. Cook until sugar is dissolved and has a syrup texture. After removing cake from oven, poke holes with a fork in bottom. Pour 1/2 of syrup mixture over cake, rest in pan 15 to 20 minutes. Remove cake from pan and brush remaining syrup on sides and top of cake.
Welsh Cookies
4 c. flour
1 tsp. nutmeg
1 3/4 c. sugar
1 c. butter
3 eggs
1 tbsp. milk
1 tsp. salt
4 tsp. baking powder (heaping)
1 c. raisins
1 tsp. vanilla
Soak raisins in hot water, drain. Combine flour, butter, salt, baking powder. Add fruit, eggs and vanilla. Roll into 4 rolls, refrigerate. Cut in 1/2 inch slices. Fry in lightly greased skillet, griddle turning only once. Sprinkle with sugar while warm
