German Shortbread
1 c butter (no substitutes)
1/2 c sugar
1/4 c rice flour (a must)
1 3/4 c flour
Cream butter and sugar add flour until it forms a soft dough. Roll out on floured surface into a 12 x 8 inch square (about 1/4 inch thick). Cut into 48 pieces (1 inch x 2 inches). Pierce each piece with a fork three times. Bake at 325 for about 30 to 35 minutes or until lightly browned.
(Ok so it's really not German, but mother is so. . . )
Quick Key Lime Pie
1 can sweetened condensed milk
1/2 c lime juice
1 8 oz tub of Cool Whip
2 or 3 drops of green food coloring (optional)
1 9 inch graham cracker pie shell
Gently fold ingredients together until mixed. Spoon into pie shell. Chill in fridge for several hours or over night.
