Thanks for posting! It sounds good. Casing? Not sure what non-meat product would accomodate the girth of a haggis. But you could sew a muslin pouch to hold it for cooking.

Here's a source for vegetarian casings that accommodate a bladder-shaped sausage. I think it would be easier to go with the muslin, or just serve it up already cut.
