The Mary Queen of Scots tartan would be great because it is based on the Stewart tartan, and the bride is a Stewart, so it would also be a way of honoring her family.
Of course if the groom wants a tartan that has pink in it, without being overly pink, there are other options. The County Offaly tartan from the House of Edgar being one:

Another is the Bruce of Kinnaird tartan (modelled here by this handsome English gent -- sorry Hamish, I couldn't help myself!):

From some manufacturers the Hunting MacGregor ancient and the Crawford ancient tartans look rather pink, as well.
Of course, for a really unique wedding kilt, why not take your traditional family tartan (Campbell) and have a special run made up that incorporated a small amount of pink in the design? He'd have a kilt that both represents his clan, and also commemorates his wedding!

I second the Nightstalker idea! I have one, and it looks great with EVERYTHING! It's not especially my favorite tartan, but it makes for a great formalwear kilt.

I have a Crawford ancient Kilt. I will be getting married in it. Mine is more red than pink in it. I will post pics after the cermony(sp?)
