A couple of places for very good cantles are Elegant Scotland and McKenzie-Frain.
It's interesting in my quest about the difference in price between inexpensive and expensive sporrans that I have found that the big difference is the quality of the cantle and the fur used.
It seems a shame to have a good sporran made, yet use an inexpensive cantle.
