A lot is down to personal discipline too. In my mid 20's I was a 32 inch waist, I went up to about 38, but have been on a diet and have got back down to a 32-33 (I'll be 42 in a week).
The real killers are beer, confectionery and fizzy drinks (Cola) combined with a sedintary lifestyle it doesn't take much to add the pounds on.
Also its not necessarily what you eat but when you eat it in the day. I'll east pasta, Rice and potatoes at lunch but will avoid in the evening as my system can't digest it before sleep. I'm not really missing out the things I like but just thinking about when i have them. I don't tend to drink in the house either, i'm a big beer drinker but rarely have any at home it gives the system a rest.
Your build will effect things too I'm 1.88m and was just under 94 kg, I got down to 79 but wave crept back up to about 83. I'm not going to let that work go to waste so i'm going to get back down to about 80.
Its a hell of a lot harder to get it off than keep it off though!!
