Aye, buy another nice one and leave it a folder. 
A man can never have too many knives anyway.
If you really wanted to do that, the best way would be to split the knife by dis-assembly, and use one half of the folder handle (likely the RH side), and make a spacer/blank to take up the space, of just use it on a new straight blade, and leave the back flat. But really, it is more work than it is worth.
I do frequently carry a folder instead of a sgian dubh in my sock, usually one with a pocket clip, tucked in between the aprons of the kilt at the top, with the clip on the outside of the outer apron, but under the belt.

I tend to do the same thing, save that I clip it to the inner apron, with the clip between the two aprons.
