Thank you all.
The canvas wasn't as bad as I thought it would be. Granted I just finished working with ripstop so pretty much anything was gonna fall short after that for this type of design.
I suggest a good wash of the fabric BEFORE cutting it just to loosen it up if anything. After that it irons well and after taken it out last weekend, I can attest first hand to the excellent way the pleats kept up after several hour long car rides and various types of seats (Booth, chair, barstool) so I say "Go for it!"
