Quick pasta sauce (10 minutes):
1 chopped chili
1 clove crushed garlic
1 chopped onion
8 strips good bacon, cut into small pieces
1 tin crushed tomatoes
1 tsp sugar or honey
seasoning as preferred
Fry bacon till golden, add onion, chili and garlic and fry till bacon is done. Add tomatoes and sugar and cook through. Season to taste.
Serves 2.

Kid friendly and quick
"Spanish Rice"
Large microwave safe glass casserole.
Chopped onion and 1 lb ground beef. Cover, nuke on High 2 mins., Stir, nuke on high for another two minutes. Drain off excess fat. Pour in 1 can stewed tomatoes, and 1 can of whole kernel corn, a half jar of medium salsa. Add some Italian seasoning, if desired. Stir while adding about 3 cups instant rice. (The rice should be covered by the liquid) Nuke covered for 30 minutes. Set the table and prepare any warm bevvies. When the microwave stops, wait about five minutes. (Just long enough to get the bevvies and condiments on the table) serve. will feed about six people.

This reminds, tho I can't understand why it does, of my all time favorite pasta sauce.
1 large can of chopped tomatoes
chiffonade of 8-10 fresh basil leaves( really thin strips )
8-10 cloves of crushed garlic, powder is not an acceptable substitute for this dish.
1/4 cup virgin olive oil.
Combine all ingredients in a glass or stainless steel bowl except the oil.
Seal with an airtight cover and put in the fridge for 24-48 hours.
Take it out of the fridge, add the oil, mix thoroughly, and warm it up over low heat, you do not want to cook the sauce. Salt and pepper to taste.
Serve over a ziti, rotini, shell type noodle.
Note: Do not let it sit for more than 48 hours. Some sort of reaction with the garlic ruins the flavor. You can heat and serve it immediately but it won't have the same flavor.
During hot weather I serve it at room temperature.

For a healthy fruit desert.
Berry Crumble
Blueberries, raspberries, apples, or cranberries.
Cover the bottom of a 9 x 13 glass casserole with desired fruit. mix in a bowl a half stick softened butter (from a cow, not a chem lab) 1 cup Brown sugar and about 2 cups oatmeal. drizzle a little lemon juice over the fruit and then cover with oatmeal mixture. cover with plastic wrap and nuke for about twenty minutes or until the fruit bubbles through the oatmeal topping. Allow to cool for about five minutes then scoop into a small bowl and top with vanilla ice cream.
THERE WILL BE NO LEFTOVERS.

I must have more then a few drops of Scot blood, as I hate to heat up the house during the summer with my cooking when I am paying so much to cool it with the air conditioning. I have a gas grill on the patio right outside the kitchen door. This works well for some good meals on the fly.
I get home from work and ignite the grill. In the kitchen, I wash enough Yukon Gold potatoes to go around for dinner. pierce each about twice with a dinner fork and place in a circle in the microwave. Nuke for 5 minutes. Chop up broccoli, or other fresh veggie and arrange in microwave safe covered casserole. Take steak, pork chops, or chicken breasts to the grill and start them a cookin'. The microwave should have stopped. place the casserole in the center , and turn the potatoes 180 degrees as arranging around the casserole. Nuke for 8 minutes Set out plates on the counter and set the table. Nuke stops, take the potatoes out and place on plates, restart the nuke for 10 minutes, turn the meat over on the grill, set out the beverages and condiments. Nuke stops, get the meats off the grill and place on the plates, then dish out the vegetable. put the plates on the table and enjoy. About 25 minutes. This works well for two to eight people for the timing.
In case you have not guessed it already, I love the kitchen.

The Berry Crumble recipe will work with FRESH peaches if you bake uncovered in a gas 5 oven instead of the microwave. Takes about 35 minutes.

Cottage Pie
I got a little creative tonight, so I thought I would try my hand at another shepard's pie. Only one problem- no lamb! So I had to use beef.
So here goes (oh yeah, I'm one of thost pinch of this cooks, so I am guessing at measurements. Sorry if I am not exact!)
Start by making your favorite mashed (or creamed) potatos.
What I used:
2 medium brown (russett) potatos
3 medium red potatos
butter (no idea how much I used, sorry)
half & half (no idea how much)
Just boil potatos, drain, mash, and combine everything and mix!
Filling
I used round steak because it is very lean. Use whatever you like here
1.5 pounds of round steak, cut into 1/2 inch cubes
1 carrot (about 7 in long) cut into thin slices
hand-full of frozen green peas (about 1/4 to 1/2 cup, estimated)
worcestershire sauce
olive oil
onion (chopped, about 1/4 cup)
flour
butter
brown steak in about 2 tbsp olive oil. add about 1 tbsp worcestershire sauce and onion. Cook on med heat about 5 min, then add peas and carrots. reduce heat and simmer about 10-15 min. melt butter in small pan. add flour and let it start to brown-I think I used about 4tbsp of butter and 2 tbsp of flour, but again, no measurements while cooking. pour this into pan with meat and stir, adding a little water to make a gravy. layer this in a large glass pan and cover with mashed potatos. place under broiler until top begins to brown, about 5 to 15 min, depending on oven.
Hope you can follow this. As I said, I didn't measure anything here.
BTW- I once ran across a Rachael Ray recipe for Shepard's Pie. I no longer remember where I saw it, but it looked pretty good if you need an exact recipe to follow.
