There's a great Music shop in Ennis - Custy's Music, if you love celtic music.
If you call into Kilrush youth hostel, say hello to Maise Finucane for me.
A drive up the coast is great from Kilkee (you can see dolphins there) to Ballyvaughan.
The Cliffs of Mohar are good, but there are cliffs just as beautiful south of Kilkee, and less touristy.
Lahinch is a nice coastal town, there's a great T shirt shop there that print their own celtic designs.
The Guinness Hopstore is well worth a visit, and if you're into history, seeing the Book of kells at Trinity College in Dublin is an experience.
