Oh my god, I am jealous!!! My wife and I love smoked salmon but ususally only have it on special occasions as the good stuff is hard to come by. Lox and bagels is a nice Jewish substitute, though.

Smoked salmon is something the F-H.C.A.G. love with a passion.
There is a wonderful episode of Alton Brown's Good Eats series (Food Network) called "Where there's smoke, there's fish" which does a great job of explaining how to smoke a fish.
My smoker is an electric Brinkman and makes the job even easier.

I think I saw that one. Is that the episode where Alton smoked the fish in a smoker he made from a cardboard box outside of a motel room?
