Even though I AM sitting here having grits, eggs and sweet tea for breakfast I'm afraid I'll have to pass on the 'possum.

    Thanks anyway though.

Now what on earth is my husband going to think when I tell him I'm craving Possum and Sweet Potatoes?

He'll probably bring me back a muskrat as there aren't any possums in Wyoming.

Don't pass up the muskrat. I remember them being $1 or $2 not that long ago.

Doesn't matter whether ya get 'em with a gun er a Goodyear, it's all good eatin'.

Grits? We ate the last of our grits up this morning, with a fresh diced Habanero pepper from the garden, and some grated cheddar.

Now I'm out and need more, and unfortunately grits ain't a Canadian thing.

    Chelsea,

Like Tyger said, don't pass up the muskrat. Cut it up, boil it with onion and garlic then roll in seasoned flour and fry. It's good eating. Muskrat is a dark meat but tasty. There's not much we haven't tried.

Well, then, since you're concerned about what it LOOKS like an opossum has been eating, I won't tell you what most commercially raised chickens really ARE eating. I'll just leave you wondering. Which is worse. Because I'm mean.

Oh my. It really is true. You can buy anything online.

As a Westerner transplanted to Florida, I've developed a taste for grits. It helps that, as a whole-grain food, grits is good for you. Means I have a healthy alternative that I like when I eat breakfast out.

I have yet to find a place serving opossum, however.

Check with the local volunteer fire department, or other civic organizations. There's one not far from me, in the Pine Barrens, that holds (or at least used to hold) an annual muskrat dinner as a fund raiser. I've heard of other organizations holding game dinners as a means of fund raising. Satisfy your curiousity and support a worthy cause at the same time.
