Ahh! Vegemite, God's gift to Oz! On toast, it was a given at every breakfast. Yum!
That cut of bacon back home we called "Shoulder rashers" (Rarely seen here in California), the FDA wants us dead of Cholesterol, hence 'Middle Rashers" with lots of fat are all one can usually find in Supermarkets. I think I saw some once in Trader Joes, but a long time ago.

I've been getting really good (very little fat) bacon at CostCo lately. It's their house brand and has a good flavor too. I get it for our Lodge breakfasts, and really it's too much quantity for most families to buy. I think the easiest way for me to approximate the "Scottish" bacon, would be for me to buy a nice Virginia ham and slice it up.
Vegimite is sold in the local Albertson's supermarket here. everything else seems to be totally do-able.

Porridge is very common tae start breccy...
followed by the full Scottish fry oop...
we use Scots Oats... (make it wi' milk- no water!)

frae oor wab sicht...
Scottish Porridge served however you like it: with salt, brown sugar, honey,
butter, milk or even a shot of whisky on top!
Choice of fresh brewed Coffee, Decaf Coffee, Tea, Decaf Tea, several
different Herbal Teas and Fruit Juices. We proudly use 'Fairtrade' Coffee
and Tea at Ferintosh.

How about,smoked salmon with scrambled egg?In this part of the world we sometimes wash it down with a dram of Talisker. Also don't forget the oatcakes.

Remember if you want beans, they are not American baked beans! They're beans in tomato sauce, and you can't find them in American stores, except in the imported food sections of grocery stores (the British section). Heinz makes them, and they're called "Beans in Tomato Sauce" with a turquoise blue label. Please don't use baked beans - they're absolutely not the same thing!
I very often make fried eggs, beans and toast for breakfast.
