I don't see how you'd have to do anything different for a Muslim. They are allowed sheep and all the parts. I make my own either by hunting (venison or hog) or buying the parts directly from the slaughter house (sheep or beef). As for vegetarian, I can't help you. As a chef maybe you could improvise a vegetarian haggis.

I can attest that Caledonian Kitchen is very good quality. (My personal favorite is their Highland Beef version. The vegetarian/vegan version is also surprisingly palatable, though with a detectable flavor of soy sauce.) Being in the U.K. though, you may want to go with something produced on your own island.

I con understand the concern with the muslim as I'm quite sure that Haggis are not necessarily Halal but the MacSweens vegetarian one is a good call.
Now I'm trying to rake my brain for what else in available...of course having lived in Scotland for almost a decade there are so many local varieties that I have tried, but I'm thinking of what is availale over the shelf (and not in a tin).
To think of those poor Haggis running free and then sold in a cylindrical tomb

Haggis pizza?
Now there's an intriguing thought...

Some Muslims are strict about keeping a "zabiha-only" diet and some are not. I would do vegetarian just in case. And remember to put NO alcohol in the recipe (just in case there is any. You never know with Scots!) as Islam restricts the consumption of any alcohol, even if it is simply used in cooking.

The cub, (yes I did say this is for our cub pack - 8-1 01/2) has both Muslim and Hindu parents so we have to be very careful, hence the veggie haggis - a misnomer I know but...
...and as they're young there will be NO alocohol anyway.
Just as a side note, Islam strictly forbids the consumption of the fermentation of the grape and the grain, but interestingly not honey, so technically they can drink mead...
